A whisk and paddle attachment is required to achieve the desired result.
If using a mixer with less than 1000 watts, additional whipping time may be required and results may not be achieved.
Our Roberts - Silky Icing Meringue Buttercream Mix has been developed by us in Australia and is proudly manufactured here as well.
Just follow our easy recipe that only requires you to add Water and Unsalted Butter.
A vegetable creaming shortening can also be substituted instead of butter, or used in a combination of both.
We are most proud of our recipe that has been designed to enable the home baker to achieve a consistent, and quick result as close to a Swiss Meringue Buttercream style made from scratch.
You don't need to boil or cook the mixture beforehand, you just add water and mix and then add diced butter and mix again.!
They silky smooth icing has a lovely subtle vanilla flavour that melts in the mouth without any gritty or sugary aftertaste.
The mix can also be flavoured and coloured.
400g of Dry Mix, will easily cover a 8" Round cake, or enough to ice 24 cupcakes.
Dry mix can be used 200g at a time, and any unused dry mix can be stored for later use.
Mixture can be piped or spread and holds firm if refrigerated - great to use as in between layers as well.

Directions: (see back of the packet for ratios required)
- Prepare butter by cutting into 1 cm cubes.
- Place Dry Mix and hot water in the bowl of an electric mixer (suitable only for mixers 1000 Watts and above with both whisk & paddle attachment). Hand mix with a spoon until combined. Leave to cool.
- Next, using a whisk attachment, whip on low speed for 1 minute, then turn to medium to high speed and whip for 8 minutes or until medium peaks form.
- Change to a paddle attachment and add in butter ¼ at a time whilst mixing on medium speed. Once incorporated beat on high for 10 minutes or until the mixture is thick and smooth. Note: Don't be tempted to stop before the required time, as it will impact the results. If the mixture looks like it has curdled, it hasn't, just keep beating on high for the required time as the fats need to be incorporate into the egg white mixture. If adding flavour or colour, add during the last minute of mixing.
- Spoon the buttercream into a piping bag fitted with a nozzle or spread directly onto the cake.
NOTE: As the mixture contains egg white and butter, your decorated cake, should be stored in the fridge until the time of serving.
Any unused made up silky buttercream icing, can be stored in the refrigerator up to 5 days.

Once your order ships you should receive a confirmation email with tracking information so you can track it online and get an up to date ETA from our courier.
Unfortunately our Couriers cannot deliver to PO BOXES, so please ensure you supply us with a physical delivery address.
Pick up/Click & Collect orders will be ready approx. 1-2 Business Days after your order is placed, you should receive email notification when your order is ready to collect but if you are unsure if your order is ready or not please contact the store for confirmation prior to coming in. If you place your order AFTER 12pm AEST on Friday afternoon your pick up order will NOT be ready until at least the following Monday, in this instance please contact local store for alternate options..
NOTIFY OUT OF STOCK: Sometimes orders come in too quick and this results in items becoming unavailable after you have purchased them. Checking this box during checkout ensures you are notified if for some reason a product you purchased becomes unavailable, we will notify you prior to your order leaving our warehouse to discuss possible replacement options (if we don't hear back from you within 24 hours after we attempt to contact you, we will ship your order and refund you for the item that was out of stock). Returns
RETURN Item(s) need to be returned within 15 days of delivery/purchase, sealed and unused in its original packaging and condition. We cannot accept food products as a return unless the goods are faulty. For postal returns, you are responsible for safely packaging and posting your return to ensure we receive it back in resalable condition.
DAMAGED OR INCORRECT ITEMS RECEIVED If you receive damaged or incorrect items in your order, please notify us within 7 days of receiving your order. For damages we will require photos to be emailed to info.toptiercakesupplies@gmail.com clearly showing the damage. Once we have received these we will issue you a Credit to your account, a refund or re send the items out to you depending on what suits you best.
SALES TAXES We are required to automatically charge and withhold the applicable GST for orders to be delivered to addresses within Australia. Each customer shall be solely responsible for all sales taxes, or other taxes, on orders shipped to any other state or country.
